I saw a recipe on a blog called The Freshman Cook for Pumpkin Pecan Biscotti. The recipe had chocolate chips in it as well as chocolate drizzled over the pieces. I tried to keep mine just a little bit healthier and skipped the chocolate. I also substituted with White Whole Wheat Flour and added Cherry Craisins to mine.
I am just going to tell you right now that I am so impressed with myself! I had never made biscotti before. Mostly because I love it so much that I’m afraid I will eat the whole batch in one sitting. These turned out so good!! I will definitely be making these again. I will also be sending half of each batch back to college with my daughter.
Here are most of the ingredients I used… I didn’t have the sugar out yet. Then I didn’t use the chocolate chips and didn’t need the baking soda. |

OMG! I LOVE, LOVE, LOVE “ANY” recipe that has PUMPKIN in it! I wish I like to cook… The recipe seems a little too complicated for me, but if you ever decide to sell them, sign me up! LOL
